Yorkshire Dales Cookery School – A Culinary Adventure...​​

Reconnecting people with their food. Croquembouche is a bespoke country skills and cookery school situated in the village of Grassington. We offer all the traditional cookery courses you would expect from a cookery school but have the added dimension of teaching skills such as fishing, shooting, foraging and butchery ,web have a real field to fork philosophy running through our courses. Founded by multi-award-winning Chef Lionel Strub, the Yorkshire Dales Cookery School offers hands-on culinary experiences that celebrate local, seasonal ingredients. Chef Lionel, with his classical French training and a passion for sustainability, brings his expertise from the award-winning Clarendon Country Pub to the school.

At the heart of the school is a commitment to responsible sourcing and working in harmony with nature. Our courses immerse students in farm-to-table practices, including foraging, fishing, and sourcing ingredients directly from local farms.

Hello Lionel

I just wanted to send my belated thanks to you for our wonderful patisserie course that my Mum and I did with you. 

We enjoyed our croissants at the cottage where we were staying and they turned out brilliantly (for beginners 😁).

We also filled some of our choux buns with cream cheese and smoked salmon and had them with cocktails in the cottage. The rest we have frozen to enjoy with cream and chocolate sauce. 

The mini croquembouche was the icing on the cake. We loved it and enjoyed that at our cottage too.
